Activates Grimm (MicroProfile OpenAPI 4.1) in a vidocq deployment and serves the assembled document at /openapi over the Chappe engine. The model is built by grimm-cdi-vauban's CDI BCE at startup; this extension looks up the OpenApiResource bean and renders it through a Chappe handler (so the document is served on the same engine/origin as the Swagger UI).
